Cook the rice well in a rice cooker or any method preferred. Leave the rice to cool completely. Heat 1 tbs oil in a frying pan or wok over high heat. Add the egg and swirl to cover pan. Cook for 2-3 minutes or until just set. Add bacon and cook for 2 minutes. Add rice and toss over high heat for 2-3 minutes. Stir in bacon and veg mixture with soy sauce, , spring onion and ginger. Toss for 1 minute, then serve.
- 2 cups white rice
- 1 tbs oil, extra 2tbs
- 3 eggs, lightly whisked
- 2 rashers bacon, chopped
- 1 cup frozen peas
- 250g small peeled cooked prawns
- 2 tbs soy sauce
- 3 spring onions, sliced
- 2 tsp grated ginger
